Recipe: Salted Caramel Apple Hand Pies

Gone apple-picking and can’t decide what to do with your haul? Try this delicious recipe for salted caramel apple hand pies from Truvia for a twist on two classic fall treats. Add a scoop of vanilla ice cream mixed with a dash of cinnamon to take this dessert to the next level!

Yields 10 pies.

Ingredients for the caramel sauce:

  • ½ cup of Truvia Brown Sugar Blend
  • ½ cup of heavy cream
  • 4 tablespoons of unsalted butter
  • 1 teaspoon of vanilla extract
  • pinch of sea salt

Ingredients for the hand pies:

  • 3 cups of diced, peeled and cored Granny Smith apples (about three apples)   [Golden Delicious, Honeycrisps or McIntosh will work too!]
  • ¼ cup of caramel sauce
  • ½ teaspoon of cinnamon
  • 1 teaspoon all-purpose flour
  • 1 egg beaten

Directions for the sauce:

  1. Add the caramel sauce ingredients to a small saucepan. Bring to a slow boil, whisking continuously until the sauce thickens and becomes a golden brown. Whisk for about 9-11 minutes.
  2. Remove from the heat and pour into a clean jar and cool completely.

Directions for the pies:

  1. Preheat oven to 350°F. Line two baking sheets with parchment and set aside.
  2. In a large bowl add the apple chunks, ¼ cup of caramel sauce, cinnamon, and flour. Toss to coat.
  3. Roll out half the pie dough into a 12” round. Cut into ten 4-inch circles.
  4. Spoon a heaping tablespoon of apple mixture into the center of one round; lightly brush water around the perimeter of the dough and place another circle on top. Press lightly with your fingers to adhere top dough to bottom. Use a fork to crimp and place on a parchment-lined baking sheet. Repeat with remaining dough and apples. Brush all pies with beaten egg and sprinkle with sea salt.
  5. Bake for 30-35 minutes until the tops are golden brown. Remove from the oven and cool. Drizzle with remaining caramel sauce and serve. Enjoy!
