At Taste Buds Kitchen, we love working with fresh, seasonal ingredients. Yes, we’re well past Halloween season, but one of our favorite seasonal ingredients is still the pumpkin–it’s not just for October!
There are so many different ways to enjoy pumpkins this winter. If you scoop out the seeds, rinse them, and roast them with salt until golden brown, they become a delicious and healthy snack. There are also many uses for the inside of the actual pumpkin–called the pulp–including pumpkin pie, pumpkin bread, and pumpkin mac and cheese!
That third dish is one of our favorites. To make pumpkin mac and cheese, just add pumpkin puree, either scooped and cooked from the inside of a pumpkin or from a can, to your favorite plain mac and cheese recipe. And don’t forget–once you’ve scooped out the seeds and pulp, you can repurpose the pumpkin into holiday decorations using spray paint, decorating tape, and all your favorite crafts tools.
