The beauty of pesto is that there are about a million different variations. Well, maybe not a million, but close to it! Last week I some free time and decided to give a new idea for walnut-parsley pesto a try. I had some walnuts on hand and it sounded like it would be delicious. After a brief blitz in the food processor everything came together quickly and easily to make a delicious herby spread. I swirled some into noodles for dinner to resounding applause. I think I’ll try another pesto recipe tomorrow! —
Walnut Parsley Pesto
1/2 cup packed fresh parsley leaves
1/2 cup packed fresh basil leaves
1/4 cup walnuts
4 tablespoons grated Parmesan cheese
1 large garlic clove
1 pinch kosher salt
1/4 cup good olive oil
Add the basil,
parsley, walnuts, Parmesan and garlic to a food processor and pulse until a
fine paste forms. Then add the salt and pulse again, briefly. With the
processor on low pour the olive oil in a steady stream into the mixture until
everything is just combined. Serve!
