Passover Raisin Muffins

New York Family‘s Listings Editor makes these delicious muffins for Passover every year. It’s a simple but heavenly treat featuring matzah cake meal and potato starch, sweetened by raisins and cinnamon sugar. Happy Passover!

Ingredients  (makes 12)

  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup matzah cake meal
  • 1/4 cup potato starch
  • pinch of salt
  • 1/2 cup raisins
  • 1/2 cup cinnamon-sugar mixture

Directions

Preheat oven to 325 Fahrenheit. Place paper liners in muffin pan.

In a bowl, beat oil and sugar together with an electric mixer until combined. Beat eggs in one at a time to oil and sugar. Add cake meal, potato starch, and salt. Blend until thoroughly combined. Fold in raisins.

Fill muffin cups no more than 3/4 full. Sprinkle with cinnamon-sugar mixture. Bake for 40-50 minutes.
