His ice cream sandwiches have a touch of French in them by putting ice cream and sorbet in between handmade macaron shells. Take your pick from Salted Caramel, Pistachio Raspberry, Coconut Mango, and Passion Fruit Cheesecake. $5 each

Magnolia Bakery: Magnolia Bakery’s ice cream sandwiches are back and better than ever! Offering flavors such as double fudge brownie, red velvet, magic cookie bar, and lemon bar. Celebrate this summer with one of these sweet treats! $6 each

Melt Bakery: New York’s first ice cream sandwich store started in the summer of 2010. Since being open they have created some of the most delicious sandwiches. For those with a big appetite the regular size is perfect for you, but for those who just want a little taste their sandwiches come in mini sizes too! Try the Elvis, which consists of peanut butter cookies with banana ice cream or the lovelet that has cream cheese ice cream in between red velvet meltcakes. $5 regular size, $3 mini

Over the Rainbow ice cream sandwich is M&M sugar cookies with vanilla ice cream in the middle.
