My neighbor and new friend Katie makes the same dish every Monday night for her family – chick peas, cucumber, celery and chicken tossed with pesto. As she was describing it to me the only way I could remember the ingredients was by realizing they all started with the letter C! I added the cherry tomatoes and you can add whatever you have in the fridge (regardless of spelling) because this salad is delicious no matter what is in it. —
INGREDIENTS:
(Makes four servings)
1 can chick peas, drained and rinsed
1 English cucumber, chopped
3 stalks celery, chopped
1 pint cherry tomatoes, quartered
2 cup rotisserie chicken, chopped
3/4 cup pesto
1 bag of baby spinach
Fresh lemon juice
Salt and freshly ground pepper
Grated Parmesan
DIRECTIONS:
Combine the chick peas, cucumber, celery, cherry tomatoes, chicken and pesto. Toss to coat. Squeeze fresh lemon juice over baby spinach and season generously with salt and pepper. Serve salad over a bed of spinach and sprinkle with grated Parmesan.
