Sometimes it can be hard to find something to eat that is healthy, delicious, satisfying and easy. But I have found this manna. It’s called Hummus. I know, I know, who cares, hummus schmummus. What’s the big deal? But let me tell you that this recipe will revolutionize your hummus eating. My daughter loves it and wants it in her lunch box every day and my husband is very happy to have a few crackers slathered with it when he gets home from work in that weird time before dinner is ready when everyone is prowling around the kitchen like a bloodthirsty vampire (Ok, so I’m reading Twilight, I confess!). — We make it so often that I’ve taught my daughter how to make it herself! I usually make a double recipe once a week and we are all set.
The Best Hummus Ever
1 can of chickpeas, rinsed
%uFFFD cup tahini (if you can find raw, organic tahini, it’s delicious)
2 cloves of garlic, peeled
Juice of 2 lemons
%uFFFD cup extra virgin olive oil
1 teaspoon salt
1 teaspoon cumin
%uFFFD cup warm water
1. Combine all ingredients except water in the bowl of a food processor and blend for 2 minutes.
2. Add the water through the tube while the processor is still running and blend for another minute or so.
Keeps in the fridge for about a week.
