Sweet potatoes aren’t just for Thanksgiving anymore. Enjoy this fall root vegetable and get your daily dose of vitamin A and beta carotene, both essential for eye health and vision. Sweet potatoes are ranked number one in nutrition of all vegetables, beating out spinach, the second runner up by 100 points, by the Center for Science in the Public Interest. Other benefits of this wholesome vegetable are it’s complex carbohydrates, protein, iron, calcium and vitamin C content. When eaten with the skin, sweet potatoes pack more fiber than oatmeal! —
Mashed Sweet Potatoes
Peel and cut up pieces of sweet potato and boil until tender. Place in a large bowl and mash with some unsalted butter and honey. Season to taste with nutmeg, cinnamon, ground cumin, paprika, salt or pepper.
