4 Recipes to Celebrate National Strawberry Month

   
May is National Strawberry Month! Celebrate with recipes for Sweet Grilled Pizza, Hidden Strawberry Cupcakes, Strawberry Brownies, and Frozen Yogurt with Berries.
    

*Note: While these recipes call for specific Rigoni di Asiago products, feel free to substitute with your favorite brand.
     

Sweet Grilled Pizza with Strawberries and Chocolate

Prep Time: 5 minutes | Total Time: 20 minutes | Servings: 4-6

Watch your pizza dough to ensure you don’t burn it.

Ingredients

  • 4 ounces pizza dough, rolled thin
  • 1 basket of strawberries, washed and sliced thin
  • 1½ teaspoon butter
  • ¼ cup Nocciolata Organic Hazelnut Spread
  • Canola oil spray
  • 1 cartoon of ice cream (optional)

   
Directions

  1. Heat a charcoal or gas grill to high.
        
  2. In a small sauté pan, melt butter, and gently sauté the strawberries for 1-2 minutes.
        
  3. Once the grill is hot, spray with canola oil spray to ensure the pizza doesn’t stick. Add pizza dough, close the lid, and let the pizza cook for about 3-5 minutes depending on the thickness. Flip the pizza dough and cook for another 2-4 minutes.
        
  4. Once the pizza begins to brown and grill marks appear, spread the Nocciolata on the pizza, top with strawberries and grill for another 30 seconds.
        
  5. Remove the pizza from the grill, let cool slightly, and top with ice cream or whipping cream if desired.

 

Hidden Strawberry Cupcakes

Total Time: 1 hour, 15 minutes | Makes: 12 cupcakes

Cupcakes

Ingredients

  • 1¾ cup of flour
  • ½ cup butter, room temperature
  • ¾ cup sugar
  • 2 large organic eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1½ tsp baking powder
  • ¾ cup organic whole milk
  • ½ tsp fine salt
  • 2 tbsp Rigoni di Asiago Fiordifrutta Organic Fruit Spread — Strawberry, room temperature
  • 12 small strawberries, hulled

Directions

  1. Preheat oven to 350ºF. Line 12 standard muffin cups with paper liners, set aside.
     
  2. In a medium sized bowl mix together flour, salt, and baking powder. Set aside.
     
  3. In a large bowl cream together sugar and butter until smooth. Mix in eggs on at a time until incorporated.
     
  4. Mix in milk and vanilla.
     
  5. Mix in flour mixture.
     
  6. Pour 1 heaping tbsp of batter into all 12 muffin cups.
     
  7. Pour ½ tsp jam into each cup and place strawberry, wide side down on top of jam.
     
  8. Spoon another heaping tbsp of batter directly on top of strawberry. No need to spread evenly, it will do so naturally once in oven.
     
  9. Bake for 20-25 minutes, until lightly tanned in color. Cool completely before frosting.
         

Strawberry Mascarpone Frosting

Ingredients

  • 9 oz mascarpone (2 tbsp set aside), room temperature
  • 2 oz butter, room temperature
  • 1 1/3 cup powdered sugar
  • 3 tbsp Rigoni di Asiago Fiordifrutta Organic Fruit Spread – Strawberry, room temperature
  • 6 medium sized fresh strawberries, hulled

Directions

  1. Slice strawberries top to bottom into 4-5 pieces, set aside.
      
  2. In a small bowl, mix together 2 tbsp of mascarpone and strawberry jam. Set aside.
      
  3. In a medium-sized bowl, whip together remaining mascarpone, butter, and sugar until fluffy (approximately 3 minutes with electric mixer).
      
  4. Whip in jam mixture. Refrigerate at least 15 minutes, until ready to frost cupcakes.
      
  5. Decorate cooled cupcakes with frosting and top with a few slices of fresh strawberries.

 

Strawberry Brownies

Total Time: 1 hour

Ingredients

  • 1 cup unsalted organic butter
  • 5 oz unsweetened chocolate, chipped
  • 1½ cup sugar
  • 4 each large organic eggs
  • 2 tsp vanilla extract
  • 1¼ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp walnuts, chopped
  • ½ cup Fiordifrutta Organic Strawberry fruit spread

   
Directions

  1. Preheat oven to 350F.
     
  2. Butter 13-by-9-by-2-inch baking pan.
     
  3. Melt butter and chocolate in a large, heavy, saucepan over low heat. Stir constantly until smooth.
     
  4. Remove from heat and stir in sugar, eggs, and vanilla.
     
  5. Mix flour, baking powder, and salt in a small bowl.
     
  6. Add chocolate mixture and whisk to blend.
     
  7. Stir in nuts.
     
  8. Pour two cups of batter in pan and spread to even layer.
     
  9. Freeze until firm, approximately 10 minutes.
     
  10. Spread our organic Fiordifrutta Strawberry over partially frozen brownie batter pan.
     
  11. Gently spread remaining batter over top and let stand 10 minutes to thaw.
     
  12. Bake brownies until tester inserted into center comes out clean, approximately 35 minutes.
     
  13. Transfer to rack and cool.
     
  14. Cut brownies into squares and store in airtight container.

 

Frozen Yogurt with Berries

Prep Time: 15 minutes | Total Time: 4½ hours

Ingredients

  • 5 tbsp of strawberry
  • 4 tbsp of raspberries
  • 1 tbsp of Dolcedì (a liquid sweetener made from apples)
  • 1½ cups of yogurt
  • 3 tsp of vanilla extract

Directions

  1. Cut the fruit into large pieces and put it in a saucepan with 1 tbsp of Dolcedì.
     
  2. Cook over low heat for approximately 10 minutes. The fruit will melt and begin to thicken.
     
  3. Pass the sauce through a sieve so as to remove all fruit seeds.
     
  4. Add to the mix the yogurt, a little Dolcedì, the vanilla extract and mix well.
     
  5. Leave to set in the freezer at least 4 hours (or overnight).
     
  6. Enjoy!
