Chocolate Malt Waffles

This super simple recipe from the Naptime Chef takes breakfast back to the delicious basics. Nothing rouses the kids up more quickly than rich, chocolatey waffles topped with juicy strawberries and a dollop of cream. And the make-ahead pancake mix takes all of five minutes to throw together, so the sweet treat will only require another ten minutes to whip up in the morning.

Ingredients

Homemade Pancake/Waffle Mix

  • 4 cups unbleached all-purpose flour
  • ½ cups malt powder (like Carnation or Horlick’s)
  • 1 tsp cinnamon (optional)
  • 3 Tbsp baking powder
  • 2 tsp baking soda
  • 2 Tbsp sugar
  • 1 ½ tsp kosher salt

Homemade Chocolate Malt Waffles

  • 1 cup pancake/waffle mix (above)
  • 3 Tbsp cocoa powder
  • 1 egg
  • 1 cup whole or 2% milk
  • 1 Tbsp unsalted butter

Directions

To prepare the pancake/waffle mix, combine all ingredients in a big bowl with a whisk. Store in an airtight container until ready to use.

To make chocolate waffles, rub the waffle maker with a bit of butter or cooking spray. Ladle about one cup of the mixture into the hot waffle maker and cook the waffles for about 2-3 minutes, or until they are golden brown.

To dress this up for serving like I did, stack sliced strawberries and whipped cream between each waffle.
