Cheese Crusted Tomatoes

Great feasts don’t have to involve complicated gastronomy techniques. Sometimes, it’s about getting back to the basics–like crunchy, munchy texture and melty, satisfying cheese. Here’s a delicious and easy recipe that we serve each year as a starter at our Thanksgiving table, for a savory dish that the whole family enjoys.

Ingredients
  • 1/2 cup fine dry breadcrumbs
  • 1 tbsp olive oil
  • 12 medium tomatoes
  • 3/4 cup crumbled cheese (we use Blue for the adults and coarsely chopped Parmesean for the kids)
  • salt and pepper to taste
Directions
Preheat oven to 375 degrees Fahrenheit.
Mix breadcrumbs and olive oil and salt and pepper in a small bowl, mashing to coat. Cut 1/4 from each tomato top. Sprinkle with half of the cheese, then top with the breadcrumb mixture. Sprinkle tops with cheese.
Arrange tomatoes in baking dish, top side up. Bake for 15 minutes or until cheese is melted and breadcrumbs are toasted.
Serve Immediately. Happy Munching!
