Anti-Oxidant Breakfast Salad

I love granola and I love salad. I decided to put the two together and came up with a yummy meal that can be eaten for breakfast lunch or dinner.

This super light yet filling salad is a cinch because nearly anything goes, which is key when throwing together a healthy meal in a pinch. It’s sweet, crunchy, and loaded with anti-oxidants and good fats, which we all need to satiate ourselves and for optimum nerve, brain and heart function. IMG_1363

Ingredients

(Serves 4)

– Medium salad bowl of mix of organic greens (try chopped raw bok choy or arugula for a change instead of lettuce)

– ½ cup Granola (look for granola with 5 grams of sugar or less – Bola makes a nice gluten-free granola)

– ½ cup of one or any combination of the following

Blueberries

grapes (halved)

strawberries (sliced)

chopped apples

pomegranate seeds

– ½ cup toasted pecans (if you put them on last over cheese fresh from the toaster they soften the cheese a little)

½ cup toasted sunflower seeds

– ½ cup chopped organic cheddar cheese or goat cheese

Drizzle with balsamic and olive oil, toasted sesame oil or high linoleic cold-pressed flaxseed oil.
