Over the weekend I saw apples for the first time this season at the Greenmarket. They are firm, crisp, and delicious – a true taste of fall. But as the apples come in, the peaches go out, and I’m not quite ready to give them up. To savor a final taste of summer I made this super-simple peach and tomato salad. Make sure that your tomatoes and peaches are close to perfection: sweet and juicy. Good ingredients will raise this recipe from so-so to sublime. —
Tomato-Peach Salad
Serves 2
1 medium ripe, but not squishy, tomato, cut in wedges
1 ripe, but not squishy, peach, cut in wedges
1/4 cup sliced red onion
1 Tablespoon extra-virgin olive oil
1 teaspoon balsamic vinegar
1/8 teaspoon kosher salt
freshly ground pepper
a handful of fresh basil leaves, chopped
1/4 cup crumbled feta
In a medium-sized bowl gently mix all of the ingredients except the feta. Transfer to salad plates or a serving dish. Top the salad with feta and more basil.
