Grilled Pork Tenderloin

For our first suburban summer, the grilling
aspirations were high. But by mid-June, my waistline started to resemble a hot
dog. Enter pork tenderloin—healthy, affordable and fabulous. — 

INGREDIENTS
(Serves 4)

1 whole
pork tenderloin, approximately 1 lb
1 tsp
dried thyme
1 tsp
dried rosemary
Salt to
taste
Freshly
ground pepper to taste
2
garlic cloves, minced
Olive
oil

DIRECTIONS

  1. Season pork
    tenderloin liberally with thyme, rosemary, salt and pepper. Place it in a
    Ziploc bag, add the minced garlic and coat with olive oil. Marinate the pork
    overnight in the refrigerator or for at least one hour.
  2. Allow to sit at room
    temperature while prepping the grill. Preheat to medium high. Grill pork
    tenderloin 5-6 minutes on each side for a total of 25-30 minutes until
    nicely charred. Allow to rest for 5 minutes, slice and serve on a platter
    with fresh rosemary and thyme.
