Do you ever try out a recipe, and it just doesn’t turn out exactly how you imagined it? Me too. But what’s so great about this recipe is that it created exactly what I wanted. These delicious cookies have the perfect chewy texture and crispy outside, gorgeous crackled tops and a delightful citrus flavor.

This cookie will appeal to both coconut lovers and haters. The coconut’s role in this cookie is mostly to create the wonderful texture – it imparts a mildly coconut flavor but not overpowering. If you can only find sweetened coconut, decrease the sugar in the recipe about 1/4 of a cup.
Chewy Lime Sugar Cookies
1 cup (2 sticks) butter or margarine, softened
1 1/2 cups sugar
1 egg
1/2 teaspoon vanilla extract
2 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
zest of one lime
1/4 cup lime juice
1/2 cup unsweetened coconut
1/2 cup sugar for rolling cookies
Spread the coconut out on a rimmed baking sheet. Bake on 350 F for 8 to 10 minutes, stirring regularly, until toasted.
Beat the butter and sugar together until light and fluffy.
Beat in the egg, then the vanilla, lime juice and lime zest.
Blend in the flour, baking powder, baking soda, salt and coconut.
Roll teaspooonfuls of dough into a ball and roll in sugar.
Place on a parchment paper lined cookie sheet and bake on 350F for 8 to 10 minutes, until just starting to brown.
Let sit before two minutes before moving to racks to cool.
