CALLING ALL NEW YORKERS! Big Blue is back in the Super Bowl. Time to plan your menu for the big day. Let’s start by sharing some fun and easy blue cheese recipes that are sure to please the most DIE HARD fans! And the best part is, they are pretty simple. GO GIANTS! —
Blue Cheese Crusted Tomatoes
Serves 6-8
INGREDIENTS
3/4 cup fine dry breadcrumbs
1 tbsp olive oil
12 medium tomatoes
1 cup blue cheese crumbles
salt and pepper to taste
Preheat oven to 375. Mix breadcrumbs and olive oil in a small bowl, mashing to coat. Cut 1/4 from each tomato. Sprinkle tomatoes with salt and pepper. Top each with 1 tbsp blue cheese. Sprinkle with breadcrumb mixture.
Arrange tomatoes on a baking pan. Cook for about 15 minutes, until slightly soft and cheese melts. Serve immediately.
Roasted Pepper & “BIG Blue” Cheese Bruschetta
Serves 6-8
INGREDIENTS
2 jars roasted peppers – chopped coarsely
3/4 cup blue cheese crumbles
4 tsp olive oil
1 garlic clove – minced
salt and pepper to taste
In a small bowl mix all the ingredients. Serve with bread toasts.
