Like a lot of people, I like to cook. I’m not great at it, but it’s something I enjoy doing and getting better at with practice. More than cooking, though, I think if I’m honest I have to confess that I really love to eat. Like really. —
Which is why I’ve spent way too much time fretting over what to stock our freezer with for when the baby comes. During these last few weeks without a full-time job, I’ve been able to spend entire afternoons planning, shopping for, prepping and cooking dinner—and sometimes entire mornings baking up treats like this and this. It’s been fun, but I know that once this baby comes I won’t have that kind of time anymore.
So, with less than two weeks until my due date, I’m in full-on freezer stocking mode. I started by making a giant pot of this ridiculously easy soup last night. This morning I pulled this banana chocolate chip bread out of the oven, wrapped it up tight and threw it in the freezer so I wouldn’t be tempted to demolish it today. Later this week I’ll throw together a couple of chicken pot pies and make a giant batch of pasta sauce. I also plan to run a bunch of veggies (carrots, celery, onions) through the food processor and freeze them, too, as well as stock up on frozen fruit and yogurt so we can make smoothies. And finally, this weekend I’ll be mixing up a batch of my new favorite chocolate chip cookies, and lovingly placing the cute little Saran-wrapped dough balls in their own special corner of the freezer.
