Creamy Cauliflower Puree

This puree is smooth and luxurious. I eat slowly,
savoring every mouthful. I serve it like I would mashed potatoes, often with
roasted or braised meats. —


Ingredients:
(Makes 2-3 servings)

 1 head cauliflower, broken into florets
2 Tablespoons milk
1 Tablespoon extra virgin olive oil
1/2 teaspoon salt, plus more to taste
freshly ground pepper

Directions:

1. Steam the cauliflower florets on the stove or in the
microwave until very tender, about five minutes.

2. Transfer the florets to a food processor.
Add the milk, olive oil, salt, and pepper and puree until smooth. If the puree
seems too thick add a bit more milk or olive oil. Taste for seasoning, adding
salt and/or pepper if neces
sary.
