Cinnamon Swirl Loaf

If I’m ever asked to make dessert on short notice (and this
happens more often than you’d think!), I immediately bypass any thought of
making cookies, and go right to cake. Even if you’re not rolling cookie dough
out, dropping spoonfuls of dough on to the sheet just takes so much time. So
this cinnamon loaf cake is simple, quick and super delicious.

This recipe is also great because you don’t have to run to
the store for any ingredients, and it’s a little more exciting than just a
regular pound cake. Perfect for a quick breakfast, afternoon snack or delicious
dessert.


Cinnamon Swirl Loaf

Ingredients:
1 cup sugar

2 cups flour


1 teaspoon baking powder


1/2 teaspoon salt


1 egg


1 cup milk


1/3 cup oil or applesauce

1/3 cup sugar
2 teaspoons ground cinnamon


Instructions:

Stir together the sugar, flour, baking powder and salt.
Make a well in the center, and add in the egg, milk and oil.
Stir until just mixed.
In a separate bowl, mix together the sugar and cinnamon.
Pour half the batter in to a greased, 9″x5″x3″ loaf pan.
Sprinkle with half the sugar and cinnamon mix.
Pour remaining batter on top, and top with remaining sugar mix.
With a spatula, swirl the batter and topping in an up and down motion.
Bake on 350 F for 40 to 50 minutes. Cool in pan ten minutes, then invert on to a wire rack and cool completely.

The Music Institute of Long Island
