Carrot Chips
Ingredients
6 large carrots
1 tablespoon olive oil
1 teaspoon ground cinnamon
Sea salt to taste
Instructions
Preheat oven to 300 degrees. With a Kuhn vegetable peeler, peel carrots so that you remove the outer peel. Continue peeling carrots lengthwise into strips. Place strips into a bowl and toss with the olive oil and ground cinnamon. Place strips onto baking sheets and bake in the oven for approximately 40-50 minutes or until crispy.
Note: Using a Kuhn vegetable peeler is like using a mandoline, but more convenient. The same method of shaving the vegetable to make chips can be used on sweet potatoes, kale, spinach, plantains.
Chips are fun for kids and adults too!
