Each year I equate the beginning of summer with the arrival of corn on the cob at my favorite farm stand. After a non-existent spring, I’ve never had been so happy to have corn back in my life. Fresh corn on the cob is a delight on its own but is also great in salads. My recipe for Summer Corn Salad is quick, refreshing, healthy, and easy. Plus, it’s light enough to pair with all your barbecue favorites and hearty enough to stand on its own–just add grilled shrimp or chicken and you’ll have a fabulous meal!
Ingredients (makes 6 servings)
- 6 ears of corn, cooked and kernels removed
- 1 red bell pepper, diced
- 3 scallions, chopped
- 1/2 cup fresh feta cheese, crumbed
- olive oil
- salt
- pepper
Directions
Combine corn kernels, bell pepper, scallions and feta in a large mixing bowl.
Drizzle with olive oil and season with salt and pepper.
Toss to coat and serve.
