Holiday Chopped Salad

During the
winter months salads often seem unappealing, but the combination of apples,
nuts and cheese in my Holiday Chopped Salad make it really satisfying. It’s
hearty enough to hold up at a Christmas dinner, and at the same time is very
nutritious! —

Ingredients
(Makes eight servings)

1 Honey
Crisp apple, cut into match-stick size strips %uFFFD %uFFFD%uFFFD
1 tsp lemon
juice %uFFFD %uFFFD%uFFFD
2 endive,
chopped%uFFFD %uFFFD%uFFFD
1 head
radicchio, chopped%uFFFD %uFFFD%uFFFD
1/2 cup
smoked gouda, cut into 1/2 inch pieces
1/2 cup
almonds, chopped
2 tbsp
olive oil%uFFFD %uFFFD %uFFFD
2 tbsp
honey%uFFFD%uFFFD
2 tbsp
white balsamic vinegar
1/2 tsp
salt %uFFFD%uFFFD
1/2 tsp
black pepper %uFFFD

Directions

Combine
apple and lemon juice in a large bowl to prevent browning. Add the endive,
radicchio,
gouda and almonds. Whisk together olive oil and remaining
ingredients in a small bowl. Pour over salad and toss well. Enjoy!
